Apple Dumplings and Good Intentions

I’m not known for being totally prepared for many things (or any things), so you can imagine my delight when I realized I had all the ingredients on hand to make our family’s favorite Apple Dumplings for yesterday’s Snow Day.

I even had three pounds of fresh apples.  I mean, come on.  This is the stuff that dreams are made of.

FullSizeRender-5I thought of you as I peeled the apples, feeling like Aunt Bea herself, though I suspect she didn’t have this very hand-dandy apple peeler-corer-slicer that is actually so fun to use that I confess I didn’t tell my children I was doing it.  They’d come in and do all the fun parts and leave me to wipe down the sticky counter, and I wasn’t interested in being relegated to that lousy stupid job.

Except then I left the apples simmering on the stove when I left for an appointment. Peter even said, “Babe, anything you should do for those apples before we go?”

“No,” I said.
“They’re good, I said.
“They’ll simmer and be perfect for when we get back,” I said.

And then we came back to this Dutch Oven situation filled with black caramelized apple mess.  So maybe do that part differently when you make these yourself.
